Healthy Wholewheat Pasta Recipe:
-1-2 cups wholewheat pasta
-6 chopped cherry tomatoes
-2 leaves of slightly boiled cabbage (cut thinly)
-Chopped bunch of kale
-2 chopped green onions
-Grated cheese (I used Mexican blend)
Olive oil & vinegar salad dressing (any one of your choice)
Boil the pasta until cooked and toss it in a bowl with the tomatoes, raw kale, green onions and grated cheese. Add the boiled cabbage once cooked (5 -8 mins in boiling water, either on a stove or in a microwaveable bowl). Stir everything together then add a splash of the salad dressing to liven up the flavours.
This is also a really cheap meal if you buy pasta in bulk. The vegetables are all less than $4 each and are easy to snack on during the week, or save for a soup.
It’s super healthy because the majority of the vegetables are eaten raw. Therefore none of their nutrients have been cooked out and drained away in the boiling water. For obvious reasons the cabbage has to be cooked 0 unless you like the taste of raw cabbage of course!
I also invested in a microwaveable rice bowl from Walmart this week and was able to cook both my pasta and cabbage in my suite. I was tired and didn’t feel like going to the main kitchen. There are ways to eat healthily without having to buy extravagant ingredients or spending ages in the kitchen. :)
